Material introduction:

The biggest feature of guar gum is that it has a very similar structure to cellulose, and this similarity makes it have a strong affinity for cellulose, called directness. In application, guar gum is easier to hydrate than locust bean gum. In terms of chemical composition, the number of branch units of guar gum is twice that of locust bean gum, and there is no non-polar group on the straight chain of guar gum. Most of the primary and secondary hydroxyl groups are on the outside, and the galactose branched chain does not cover the active alcoholic hydroxyl groups, so it has greater hydrogen bond activity.
